Nervous about living on your own for the first time and what that’ll mean for your diet? Don’t worry! Not only will you have access to the University’s dining hall, but making simple meals in your dorm room can be a snap! Here’s a list of a few ideas and recipes to start your college culinary career.

Loaded Baked Potato

Ingredients:

  • 1 potato
  • Your favorite toppings (grated cheese, butter, bacon bits, sour cream, chives, canned chili, etc.)
  • Poke the potato several times with a fork.
  • Wrap a potato in a damp paper towel. Microwave for 5 minutes.
  • Carefully remove potato and check done-ness (stick a fork in it to see how soft it is!). If still firm, microwave in 1 minute increments until cooked.
  • Cut it open, dump on all your favorite toppings and enjoy!

Chicken Tacos

Ingredients:

  • 1 can of canned chicken
  • 1 pkg taco seasoning
  • Tortillas
  • Your favorite taco toppings (grated cheese, salsa, sour cream, lettuce, tomatoes, olives, etc.)
  • Using a microwave-safe bowl, heat up the canned chicken and stir in taco seasoning (DO NOT microwave in the can!).
  • Load up a tortilla with the warm chicken and taco toppings. Yum!

Sweet & Sour Meatballs and Rice

Ingredients:

  • 1 bag frozen meatballs
  • Jar of sweet and sour sauce
  • Microwave rice packet or bowl
  • Microwave meatballs until warm in a microwave-safe bowl.
  • Add sweet & sour sauce and warm for an additional 20-30 seconds.
  • Heat rice packet and top with warmed sweet & sour meatballs.

Apple Crisp in a Mug

Ingredients:

For the apple filling: * 1 can of apple pie filling (or choose the pie filling of your choice!)

For the topping: * 2-4 tbsp of softened butter (not melted) * 1-2 packets of Cinnamon and Spice instant oatmeal (depending on how much you like the “crumble” part of it!)

Optional: * Cool whip or vanilla ice cream

  • Add apple pie filling to a bowl or mug.
  • Mix softened butter and oatmeal packet in another bowl or mug. (Use a fork to “crumble” the butter with the dry ingredients.)
  • Layer half the filling, then half the topping, and repeat with remaining halves of both.
  • Microwave for 3 minutes.
  • Top with cool whip or vanilla ice cream!

Pizza Dip

(This recipe is made for sharing—and will help you claim “legend-status” on your wing!)

Ingredients:

  • 8-oz package of cream cheese (room temperature)
  • 12-oz pkg of shredded Italian cheese
  • 8-oz can pizza sauce
  • Optional: 1 pkg mini-pepperoni slices
  • Pita triangles or tortilla chips
  • In a microwave-safe bowl, mix the cream cheese and Italian seasoning. Spread flat in the bottom of the bowl.
  • Combine mozzarella and parmesan cheeses and sprinkle half over the cream cheese.
  • Pour pizza sauce on top and add remaining cheese mixture and optional pepperoni.
  • Microwave for 2-3 minutes until cheese is almost melted. Let stand for 1-2 minutes.
  • Enjoy with pita triangles or tortilla chips!

  • Macaroni and Cheese Cups (if you’re feeling adventurous, add a package of tuna for an instant tuna-noodle casserole!)
  • Ramen noodles
  • Quesadillas / Nachos
  • Peanut butter & jelly / peanut butter & banana sandwiches
  • Instant oatmeal
  • Popcorn
  • Cereal and milk
  • Chicken nuggets
  • Frozen Dinners
